This recipe for peanut butter is simply awesome! 100% better and tastier than the store bought variety! Plus it is soo easy to do...
Ingredients:
- 1 cup roasted peanuts (leaving the brown skin on will give tiny brown flecks in the finished product)
- 1-2tbsp peanut oil or extra virgin olive oil (to make this fat-free u can substitute the oil for water or honey)
- 1tsp honey/sugar/artificial sweetner (for diabetics) (Personally I prefer honey, but you can use these other variants too)
- A pinch of salt (add more if you like it salty)
Process:
- Roast the peanuts in a pan on the stove or put them in an oven turning every two minutes till they are nice and brown.
- Once the roasting is done you can remove the brown skin if you like or just leave it on for a healthier product
- Put the peanuts in a blender and coarsely crush them. If you'd like a crunchy peanut butter you can save some of these crushed peanuts for later.
- Continue blending the remaining peanuts, once they start sticking to the side add in the oil (or whichever medium you would like to use - water/honey), salt and honey and continue blending.
- Stop and check in between to see if the consistency is to your liking. (NOTE: the more oil you add the more runny will be the finished product)
- Okay.. now that you've got the desired consistency, add in the crushed peanuts we had saved and mix them in with a spoon.
- ...and voila! get ready to have the yummiest peanut butter free of all harmful chemicals!
- oh and yes you can keep it in the fridge for upto 2 weeks.
